Baked Honey Lime Chicken Taquitos

Honey Lime Chicken Enchiladas are some of my very favorite enchiladas, but we eat them all the time, so I thought this was a fun way to change it up a bit. Here's the recipe:

Ingredients
  • 2 cups cooked and shredded chicken (I used rotisserie)
  • 4 oz cream cheese
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 Tablespoon Lime Juice
  • ⅓ cup honey
  • 1 Cup Colby Jack Cheese
  • 2 Tablespoons Cilantro, finely chopped
  • 8-10 small flour tortillas

  • Cilantro Lime Sour Cream:
  • 1 cup sour cream
  • ⅓ cup green taco sauce
  • 1 teaspoon fresh lime juice
  • ¼ cup fresh cilantro
Instructions
  1. Preheat oven to 350 degrees and prepare a baking sheet by lining it with foil and spraying it with cooking spray. Set aside.
  2. Soften the cream cheese in the microwave for about 15-20 seconds. In a mixing bowl, combine cream cheese, cumin, chili powder, garlic powder, salt, lime juice and honey. Add in the shredded chicken, colby jack cheese, and cilantro. Stir until combined well.
  3. Add about 3 Tablespoons of the chicken mixture about 1 inch from the edge of the flour tortilla. Roll it up and place it seam side down on the baking sheet. Repeat with each one and place about 1 inch apart not touching each other on baking sheet.
  4. Bake for 15-20 minutes or until the tortilla is lightly browning around the edges.
  5. To make the cilantro lime sour cream: Whisk together sour cream, taco sauce, lime juice and cilantro.

It was super delicious! Oddly, my husband wasn't as big a fan of the sweet flavor in taquitos as he is in the enchiladas, but I thought it was just as good. I made the cilantro lime sour cream to go with it and thought it was just okay. I personally feel it is just as good (or better) with plain sour cream.

Lunch Lady Brownies

I'm not really sure why this recipe has this name. Apparently it's similar to a recipe that old ladies served in elementary schools... which sounds nasty. Haha. These are good though! For real! Here's the recipe:

LUNCH LADY BROWNIES
The most incredible and fudgy brownies. This is the only brownie recipe you'll ever need!

Prep Time
15 min
Cook Time
30 min
INGREDIENTS
  1. 1 cup butter, melted
  2. 1/2 cup unsweetened cocoa powder
  3. 2 cups all-purpose flour
  4. 2 cups granulated sugar
  5. 4 large eggs
  6. 4 teaspoons vanilla extract
CHOCOLATE FROSTING
  1. 1/4 cup butter, softened
  2. 1/4 cup milk ( I use 2%)
  3. 1/4 cup unsweetened cocoa powder
  4. 3 cups powdered sugar
INSTRUCTIONS
  1. Preheat oven to 350° F. Line a 9x13-inch baking dish with foil and spray foil with non-stick spray. Set aside.
  2. In the bowl of an electric stand-mixer, add the melted butter and cocoa powder. Using the paddle attachment, blend until smooth.
  3. Add the flour and sugar. Beat together then add eggs and vanilla. Mix just until combined. Don't over mix. (Batter will be thick)
  4. Pour batter into prepared baking dish and spread out evenly. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Remove brownies from oven and let stand 15 minutes before frosting. You want the brownies still warm when you frost them!
  5. FOR CHOCOLATE FROSTING: Beat together all the frosting ingredients until smooth. Pour and spread over warm brownies. Let cool completely before cutting and serving.
NOTES
  1. Yields: 12 large brownies or 24 small brownies
These are simple and make a lot. When I tried them I honestly wasn't sure that they tasted much better than a good boxed recipe.... but my husband swears they're better. Personal preference I guess. Either way, it's fun to mix it up!

I am the worst food photographer ever. Sorry. :-)
